John Daley—chef and co-owner of the newly opened New York Sushi Ko on the Lower East Side of New York City—spoke with us while prepping for a night’s omakase service. Daley, who cut his teeth at some of the most notorious Japanese restaurants in NYC and Tokyo, is heading up this 11-seat spot to deliver his meticulously created, high-quality sushi. The passionate chef talked us through some of his ingredients and processes, his intense training (which took him to Japan to work with his master’s master) and how sushi can “deliver a message in one bite.”
